Recipe: Simple Moong Dahl
This is a simple faithful dahl recipe that is very quick and easy to make and is absolutely delicious!
Ingredients:
2 tsp ghee
5 curry leaves
½ chopped brown onion
½ tsp ajwain seeds (if you dont have these, just add more cumin seeds)
½ tsp cumin seeds
1 tsp grated/chopped ginger
1 garlic clove, finely chopped
¼ tsp ground turmeric
½ tsp ground cumin
1 tsp ground coriander
½ tsp salt
1 cup yellow split moong dahl
1 medium sized carrot, chopped into small pieces
1 handful of green beans, chopped into 2cm pieces
A handful of fresh coriander, chopped
½ lemon freshly squeezed
Black salt
Method:
- Soak dahl for 1-2 hours or rinse until the water is clear.
- Heat ghee on medium heat, using either a pressure cooker or a heavy bottomed pot
- Add curry leaves and let them splutter
- Saute the cumin seeds and ajwain seeds for about 30secs - 1 minute
- Add onions and cook until golden
- Add ginger and garlic and cook for 1-2 minutes
- Add moong dahl, carrots and beans, stir and coat them in spices and ghee
- Add 4 cups of water (if using a pressure cooker) or about 6 cups (if using a regular pot)
- Then add ground coriander, cumin, turmeric, salt
- Cover with a lid. If using a pressure cooker, fasten the lid on and turn the heat to high, let full pressure build up. Then cook on low heat for 15mins. Turn off heat & then let rest for 10 minutes. If using a regular pot, cover and bring it to a boil on high heat. Then turn the heat down and let it simmer until the dahl is mushy.
Garnish with fresh coriander, a squeeze of lemon juice and a sprinkle of black salt. Serve with rice or flat breads.
